Tataki is a Japanese method usually made with fish, seared quickly and served with bright citrus and soy. We wanted to try something different and use seafood from the cold Atlantic waters of Northern Spain. Galician octopus is sliced thin and finished with sesame, soy, and citrus to create a conserva that feels light, layered, and full of character. The result is clean, savory, and balanced bridging Japanese flavor and Spanish craft.
